There are so many ways to give your favourite rocky road a twist, but none are quite as good as this Easter egg rocky road recipe. Easy? Check. Tastes great. Check. Perfect for sharing? Triple-check!
The great thing about this Easter rocky road is that you can make it your own, mixing in any sort of mini Easter eggs and candy that you like! It’s also a great way to use up leftover Easter eggs (if that is such a thing). And it only takes around 5 minutes to prepare.

Easter Egg Rocky Road Ingredients
There are only a few main ingredients you need to make rocky road, but don’t feel limited only to these Easter-themed rocky road ingredients. You can totally make it your own, using these ingredients as a guide:

- Chocolate melts – I am using milk chocolate but you can swap it out for white chocolate, dark chocolate, caramel or anything else that takes your fancy. I do recommend using a good quality chocolate though, as that will mean your rocky road tastes better! The chocolate is the hero ingredient here.
- Marshmallows – That squishy marshmallow texture is an essential part of rocky road. Any size marshmallows work or even using marshmallow Easter eggs.
- Mini Easter eggs – You can use the Cadbury Mini Eggs or the M&M speckled eggs plus a mix of other flavoured mini chocolate eggs, like Cadbury Creme Eggs, Oreo eggs, Caramilk or anything else that takes your fancy.
- Lollies – Gummy lollies work best. I grabbed a bag of mixed soft lollies on this occasion, but my favourite for rocky road are the Allens Raspberry lollies for that sweet flavour they add.
- Pretzels – Adds a little bit of a salty crunch to your rocky road recipe.
- Coconut oil – This is optional, but adding a small amount of coconut oil can help when it comes time to cut your rocky road into pieces, making it a little easier than cutting solid chocolate.

How to Make Easter Rocky Road With Mini Eggs
The best thing about this Easter dessert recipe is how easy it is to make, which makes it a great Easter treat to make with the kids! Aside from a little help with melting chocolate, most of the steps they can do themselves.
Step 1: Prep
Prepare by lining a medium slice tray with baking paper so that the sides of the paper overhang.
Step 2: Melt The Chocolate
Melt the chocolate in the microwave, using a large microwave-safe bowl, in short bursts. I usually put mine in for around 30 seconds at a time and stir in between until it is almost melted, then stir until smooth.
If you do not have a microwave, you can melt your chocolate over the stovetop.

Step 3: Mix In
Mix in the marshmallows, lollies, pretzels and mini eggs until they are all well coated in the melted chocolate.


Prep Tip: If you live in a warm climate, place your mini eggs in the refrigerator for an hour or two before making your rocky road (or in the freezer for 20 minutes) to help prevent them from melting when you mix them through the melted chocolate.
Step 4: Pour
Pour the rocky road mixture into a lined tray and place in the refrigerator until fully set for around 2 hours.
Make sure to work quickly so that your chocolate mix does not begin to set before you spread it out in your lined pan.

Step 5: Finish
Once fully set, carefully use a knife to cut the rocky road into squares, ready to eat! You can lift the rocky road out of the tray, using the baking paper and place on a chopping board, to make it much easier to cut.

Ingredient Substitutions for Easter Rocky Road
This Easter rocky road slice is one of those recipes where you will likely never make it exactly the same each time, and that’s part of the fun. Every time I make it, I mix in a different combination of lollies and mini eggs, or I might use a different type of chocolate.
You can substitute milk chocolate for a richer dark chocolate or white chocolate, or try with a Caramilk (it’s soooo good).
For your mix-ins, use whatever mini eggs you have. You can use mini marshmallows or chop up large marshmallows, use Oreo cookies or give it an Aussie twist with some chopped Tim Tams. The options are endless!
How To Store Rocky Road

Rocky road can be stored in the refrigerator in an airtight container for up to 2 weeks or in the freezer for up to 2 months.
This means you can make it well before Easter and pop it in the freezer a month or more before. A great way to save time on your Easter food prep!

Easter Rocky Road
This Easter rocky road is made with mini Easter eggs, marshmallows, pretzels and lollies, covered in chocolate for a quick and easy Easter treat.
Ingredients
- 550g milk chocolate melts
- 150g mini Easter eggs
- 1 cup mini specked eggs
- 3/4 cup mini marshmallows
- 3/4 cup gummy lollies
- 3/4 cup prezels
- 20g coconut oil (optional)
Instructions
- Line a medium slice tray with baking paper, leaving overhang on the sides.
- In a large microwave-safe bowl, melt chocolate in 30-second bursts, stirring in between until smooth.
- Quickly stir in marshmallows, lollies, pretzels, and mini eggs until coated.
- Pour mixture into the tray and refrigerate for 2 hours or until set.
- Lift out using baking paper and cut into squares. Enjoy!
