Taco boat quiches are the perfect alternative to sandwiches for kids! They also make a great quick and easy dinner or lunch at home for the whole family too. These taco boat quiches are simple to make and take very little prep. Let the kids add their own fillings for a meal they will enjoy!

What Are Taco Boats?

Taco Tuesday just got a little different! Taco boats are a versatile item to keep stocked in your pantry.

Instead of the usual flat tortilla wraps or the crunchy style tacos, a taco boat combines both into a soft, boat-shaped tortilla that you can load up with your favourite taco fillers.

No need to worry about them unwrapping or everything falling out.

Taco boats are great for more than just tacos though! Like these lunchbox sized quiches!

Like most school mums, it can be a struggle to come up with sandwich alternative ideas for lunch boxes each day. These lunch box quiches are a perfect option for a flavour-packed and filling school lunch.

A friend recently shared the brilliant idea of using mini taco boats to make pies. No need to worry about pastry or the need for a special pie maker.

Knowing how much my kids love eggs, we made mini quiches instead, loaded with their favourite fillings!

But don’t let the kids have all the fun. These taco boat quiches are perfect for adult lunches boxes too!

You can enjoy them hot or cold. For dinner or lunch.

And you can add pretty much anything you like to your mini quiches, with as much or as little flavouring as you like.

Note: Before packing into your child’s school lunch box, make sure they don’t have any egg restrictions. Most schools have a nut allergy restriction and some also do not allow egg.

Ingredients

  • 10 Mini taco boats – You can get mini or standard-sized taco boats from the supermarket. We use mini boats for lunch boxes. When serving them as a dinner meal for the whole family, you may prefer to use the larger size. If so, you will need to double the eggs and fillings.
  • 5 eggs – Wouldn’t be quiche without egg. This is pretty much the most basic version of a quiche you can get. In fact, it is pretty much just cooked egg in a taco boat with added fillings.
  • 2/3 cup Grated mozzarella cheese – Cheese can be optional however it helps to thicken up the mixture to avoid all your fillings sinking to the bottom.
  • Fillings – You can add any fillings you want. Here are some popular options: bacon, ham, spinach, olives, tomato, jalapenos, corn, chicken, pork, carrot and so on.
  • Seasoning – Salt and pepper and season to taste.

How To Make Taco Boat Quiches

STEP ONE Preheat oven to 200 degrees Celsius (fan-force).

STEO TWO – Place mini taco boats on a lined oven tray.

STEP THREE – Whisk eggs in a medium-sized bowl. Add grated cheese and any seasoning you wish to add to your egg mixture. Combine well.

STEP FOUR – Pour egg mixture evenly between the 10 mini taco boats. Add fillings to the boats. You may want to add extra cheese sprinkled on top. We always do because we love cheese.

How to make taco boat quiches

STEP FIVE – Bake taco boats for approximately 15-17 minutes or the egg centre is firm. Enjoy warm or chilled!

Tips For Making Quiche Taco Boats

The taco boats are not always symmetrical or even.

For this reason, take care not to overfill your boats with egg mixture otherwise it will spill out. This is a good reason to use a lined tray because it can get a little messy if you overfill them.

When using full-size taco boats rather than the mini taco boats, you will need to double the quantity of egg, fillings and cheese.

We love to add jalapenos and other spicy fillings to our own mini quiches.

If you are making them for the whole family, make sure you know which ones are spicy and which are mild so you don’t accidentally give the kids a hot burst of flavour.

These taco quiche boats are also a great way to use up leftover taco meat, rotisserie chicken or pulled pork too.

Storing Mini Quiches

Mini taco quiches can be stored in an airtight container in the refrigerator for 2-4 days.

They can be eaten cold and my kids enjoy eating theirs the next day or for school lunch. Alternatively, you can reheat them in the microwave at home or work instead.

These get eaten up completely on the days they go in the lunchbox or even for lunch at home compared to sandwiches and wraps. Our kids can’t get enough of them.

Plus you get to fill them with all the things you know your kids love too which is always a winning combo!

Instructions

  1. Preheat oven to 200 degrees Celsius (fan-force).
  2. Place mini taco boats on a lined oven tray.
  3. Whisk eggs in a medium-sized bowl. Add grated cheese and any seasoning you wish to add to your egg mixture. Combine well.
  4. Pour egg mixture evenly between the 10 mini taco boats. Add fillings to the boats. Optional - sprinkle extra grated cheese on top.
  5. Bake taco boats for approximately 15-17 minutes or the egg centre is firm. Enjoy warm or chilled!

Notes

When using the full-size taco boats rather than the mini boats, you will need to double the quantity of egg and cheese.

Avoid overfilling the taco boats or your mixture will spill out as the boats are often uneven in shape.
